Butter cookies

  • 1 cup salted butter room temp
  • 2 egg yolks
  • 2/3 cup sugar
  • 1 tsp vanilla
  • 2 cup unbleached all purpose flour
  • 2-3 TBS milk
  1. cream butter and sugar until it is light and fluffy
  2. add egg yolks and vanilla. Combine well
  3. slowly mix in flour and milk until well absorbed. If the dough isn’t sticky, add another tablespoon of milk. Living at a high altitude, I’ve added about 1/2 TBS this in.
  4. Lightly flour your rolling pin and surface and roll out your dough in and outward motion.
  5. Roll out to your desired thickness. I typically do a good thickness because it makes the center a bit softer which is my favorite.
  6. Cookie cut out and transfer gently to your lined cookie sheet.
  7. Roll dough out again and repeat until completely used.
  8. Bake at 350 degrees for 11-13 minutes or until edges are lightly golden.
  9. cool on wire rack and enjoy or decorate with icing! my daughter helped!
